VOCOA Lemon Loaf Cake Mix is gluten-free, egg-free, nut-free, dairy-free, soy-free, vegan and easy to make! Simply add oil and your favorite plant-based milk. Our freeze-dried lemon powder is made from ground whole lemons organically grown in the United States.
Prep time is less than 5 minutes! Only two ingredients to add to this mix and fills a standard 9"x5" loaf pan or three mini-loaf pans.
VOCOA Lemon Loaf Mix also makes excellent lemon muffins! One pouch of mix fits in two standard muffin pans - just reduce the baking time to 25 - 30 minutes.
If you've tried our samples, we use avocado oil and oat milk. Canola, sunflower and grapeseed are also examples of light tasting oils that can be used in baking. We don't recommend using a heavy extra virgin olive oil (as much as we love EVO for other cooking!) since it will change the texture and flavor. Any plant based milk substitute can be used assuming you're not avoiding that particular allergen (e.g., soy, almond, cashew).
Ingredients: Whole grain brown rice, cane sugar, potato starch, tapioca flour (tapioca), golden flaxseed meal (ground), freeze-dried lemon powder, salt (uniodized), baking powder (corn starch, sodium bicarbonate, monocalcium phosphate).
